Gluten Free Fudge Brownies

Ingredients:

  • Brownies:
  • 12 oz semi-sweet chocolate chips (about one bag), divided
  • 2 sticks butter, melted (about 16 tablespoons)
  • 1 1/2 cups sugar
  • 2 eggs + 1 egg white
  • 2 teaspoons vanilla extract
  • 3/4 cup gluten-free all purpose flour, I like Bob's Red Mill 1:1
  • 1/4 cup sweet rice flour
  • 1/3 cup cocoa powder
  • 1 teaspoon salt
  • Chocolate Ganache:
  • 1/2 cup heavy cream
  • 1 cup chocolate chips

YIELD: 9 large brownies

DIRECTIONS:

Preheat the oven to 350F and grease and line a 9×6 inch baking pan with parchment paper and oil spray.

Separate the chocolate chips evenly in half and set one half aside. Melt the other half of the chocolate chips in the microwave until smooth in 30 second intervals. Stir well and let it cool for a few minutes.

Whisk the melted butter, sugar and vanilla until smooth. Add in the eggs and whisk well. Next is the cooled melted chocolate, then slowly add in the flours, cocoa powder and salt until smooth.

Fold in the remaining chocolate chips and pour batter into your prepared pan and smooth it all out.

Bake for 25-35 minutes or until set to your liking, let cool.

Make the chocolate ganache, heat the cream in the microwave or on the stove to until it starts to steam. Pour over the chocolate chips and let sit for a minutes or two, then stir until smooth. Pour over brownies and enjoy!
