YIELD: about 8 mini waffles
Pre-heat waffle maker if needed. Mix 1/2 cup of fruity cereal with milk and let steep, strain after 5-10min. Discard the used cereal, just keep the milk.
Add all the dry ingredients, except the fruity cereal, into a large mixing bowl, and whisk until combined.
Add in vanilla, yolk egg, milk, and oil. Mix just until the batter is smooth.
Beat the egg white separately and fold into the mixture gently. Fold in the last 1/2 cup of fruity cereal.
Make sure your waffle iron is hot before you add the batter. If your waffle iron is not non-stick, spray your preheated waffle iron with non-stick cooking spray.
Pour mix onto hot waffle iron, cook until golden brown.
Remove waffle from waffle iron and repeat until all waffles are cooked. Top with your favorite toppings, I like to make a glaze with powdered sugar and milk, then sprinkle on more fruity cereal.
